Hope Springs Avocado Spinach Mac & Cheese


 Ingredients

10 oz. Pkg. Elbow Macaroni - cooked according to directions on package and drained
2 Medium Avocados - peeled and diced (saving pits)
2 TBLS Hope Springs Gourmet Spinach Parma Dip Mix
2 Cloves Garlic - minced

1 Green Onion - sliced

1/3 Cup Chopped Parsley or Baby Spinach

2 TBLS Fresh Squeezed Lemon or Lime Juice

2 TBLS Butter

2 TBLS Flour

1 Cup Milk

2 Cups Shredded White Cheddar or Monterey Jack Cheese

Salt and Pepper


Directions

1. In large pot, cook elbow macaroni according to directions on package. 
2. In food processor; blend avocados (saving some for garnish), Spinach Parma Dip Mix,  

    garlic, green onion, parsley or spinach, lemon juice.
3. In small/medium sauce pan; melt butter and add flour to make roux. Cook 3 to 4 minutes to

    remove flour taste, stirring often. Gradually add milk and simmer until thickened. Add 

    cheese and simmer until cheese is melted. 

4. Place pasta in large bowl. Add avocado mix and combine.

    Then add cheese sauce and stir well. Add salt and pepper to taste

Garnish with avocado, chopped parsley or spinach and serve warm.   

Note: On the slim chance you have some left over, place avocado pit in center and refrigerate. (The avocado pit will keep from turning brown).

Hope Springs Tropical Rice with Broccoli and Mushrooms

Ingredients

1 TBLS Hope Springs ISLAND PEAKS Spice Blend

2 - 3 TBLS Sliced or Slivered Almonds - toasted

8 oz. White or Baby Portabella Mushrooms - sliced

1 Cup Frozen Broccoli Florets - Thawed and chopped

1 Cup White Rice

1 Cup Pineapple Juice

Juice of 1/2 Fresh Lemon

Water

2 TBLS butter

2 TBLS Olive Oil

Green Onion - sliced

Directions
​1. Toast Almond slices in bare large skillet on high heat, stirring often. This only takes just a moment. Remove from heat.

2. Sauté Mushrooms in butter and olive oil.
3. In medium pot bring 2 cups total water, pineapple juice and lemon juice to boil. Add 1 TBLS Island Peaks spice blend and Rice. 

    Stir, cover and reduce heat to simmer 20 minutes. Remove from heat and fluff rice.
7. When mushrooms are done, drain any remaining liquid and add broccoli to pan.

    Turn off heat. Add cooked rice and garnish with toasted almonds and green onion.

8.While rice is cooking, place

Hope Springs Pan Grilled Brussels Sprouts


 Ingredients

1 LB Fresh Brussels Sprouts - rinsed, dried & trimmed (large ones cut in half)
1 TBLS Hope Springs Gourmet Sedona Garlic Spice Blend
3 Strips Bacon - cut in small pieces

8 to 12 oz. Hope Springs Chicken Broth (Recipe)


Directions

1. In large skillet, cook bacon on medium heat until crispy.

    Remove bacon from skillet and set aside, reserve drippings in skillet. 
2. Place Brussels Sprouts in skillet with hot bacon drippings.

3. Season sprouts with Sedona Garlic Spice Blend, salt and pepper to taste.
4. Stir often and cook until lightly brown. 

5. Reduce heat to low and pour in chicken stock. .

6. Cover and cook for 15 to 20 minutes or until sprouts are tender.

7. Add bacon pieces and serve.


Note: If you don't want to use bacon, simply cook sprouts in 2 TLBS Olive Oil.

Hope Springs Asparagus Mushroom Bacon Casserole

Ingredients

1 - 2 tsp Hope Springs Poly Peppercorn & Garlic Spice Blend

1 Can Cream of Mushroom Soup

3/4 Cup Milk

1 Bundle Asparagus -  based trimmed and sliced in 1 inch pieces

4 oz. Baby Portobello Mushrooms - sliced

Olive Oil

4 Slices Thick Bacon - cooked crisp and crumbled

1 - 28 oz Crispy Fried Onions (Reserve 2/3 cup for top)


Directions
​1. In large bowl mix soup, milk and Poly Peppercorn & Garlic spice blend.

2. In large skillet saute Asparagus in olive oil until tender and remove.

3. In same skillet saute Mushrooms 
3. Remove pan from heat and add back the Asparagus and crumbled Bacon.
7. Add Asparagus, Mushrooms and Bacon to soup mixture with 2/3 cup Fried Onions and combine.  

8. Place mixture in greased 9 x 12 baking dish. 

9 Bake in 350 oven for 30 minutes. Top with remaining Fried Onions and bake 5 more minutes or until golden brown.

Hope Springs Supreme Mashed Potatoes 

 Ingredients

​4 russet potatoes - peeled and cubed

4 TBLS butter 

Milk or heavy cream
2 TBLS Hope Springs SUPREME BAKED POTATO Gourmet Dip Mix

1/2 cup sour cream

2 TBLS mayonnaise

Salt & pepper to taste


Directions

1. Blend Hope Springs Supreme Baked Potato Dip Mix with sour cream

    and mayonnaise, and refrigerate.

2. Place cut potatoes in large pot and cover with water.

    Cook on stove on medium / high heat until potatoes are tender.

3. Drain cooked potatoes well.

4. Add butter, and dip mixture. Mash with potato masher or use hand mixer.

5. Add milk and continue to mash until desired consistency.

6. Add salt and pepper to taste.

Stuffed Artichoke

Ingredients

2 cups Hope Springs Gourmet Rosemary, Thyme & Parmesan Crumbs 
1 cup grated parmesan
1/4 cup olive oil
1/4 cup Hope Springs Fusione Italiano Gourmet Spice Blend
4 artichokes, boiled until tender
1 cup garlic aioli, recipe follows
2 lemons, halved

Directions

1. Preheat oven to 375 degrees
2. Cut pointy tips of artichoke leaves off, and remove choke from the center. 

    Cut the stems off the artichokes so that they sit standing up.
3. Boil artichokes until tender.  Approximately 10 – 15 minutes.
4. In a mixing bowl, combine crumbs, cheese, olive oil and Fusione Italiano

    Mix thoroughly.  Carefully pack the crumb mixture into all available spaces in

    the artichoke.  Place the artichokes on a baking sheet and place in the oven. 

    Bake for 25 minutes, or until golden brown and the leaves are easily pulled out.
5. Serve the artichokes with a drizzle of garlic aioli and a squeeze of lemon juice.

Garlic Aioli Recipe:
3 garlic cloves, chopped
1 large egg (sis - I'm sure you can use egg replacement)
1 tablespoon freshly squeezed lemon juice
1 tablespoon chopped fresh parsley
1/2 teaspoon salt
2 turns freshly ground black pepper
1/2 cup olive oil

Combine the garlic, egg, lemon juice, parsley, salt and pepper in a food processor or blender and puree.  Add the oil in a slow stream and continue to process until the mixture has formed a thick emulsion.

Green Chile Fried Green Tomatoes

Ingredients

2 medium green tomatoes
2 eggs
2 TB milk
1/4 oil (I used Avocado oil)
Salt and pepper to taste
2 TBLS Hope Springs GREEN CHILE CHEESE dip  mixed according to directions
1 1/2 C Hope Springs GREEN CHILE RICE Crackers/Crumbs


​​Directions

​Use a skillet pan with 1/4 cup oil.

In a shallow plate combine egg, milk, salt, pepper and the Green Chile dip.

I used the Green Chile crackers so I had to use the food processor to crush. Once crushed place in a bowl. Slice your tomatoes 1/4 inch, place in egg mixture and coat. Then move to bowl with crumbs and coat. Place in a Medium High heat pan and cook each side 1-2 minutes each or until golden brown.

I used Hope Springs Green Chile dip to dip the fried green tomatoes. Ohhhhh so good!

Cajun Grilled Corn

 Ingredients

​4 ears of fresh corn - husked and silk removed

4 TBLS butter - softened
1 TBLS Hope Springs CAJUN NOUVEAU gourmet spice blend.


Directions

1. Spread softened butter on all sides of corn

2. Sprinkle spice blend on all sides of corn

3. Wrap corn tightly in aluminum foil

4. Place on grill and rotate every 10 minutes to cook evenly.

5. Cook until corn is tender.

Note: May cook in oven at 400 degrees and/or use frozen corn.

Be careful when removing hot corn from foil.


Baked Potato Salad


 Ingredients

6 medium potatoes - baked until done, cooled, peeled and cubed

3 or 4 hard boiled eggs - coarsely chopped

3 or 4 Kosher dill pickles - chopped

2 or 3 celery ribs - stringed and sliced

1 cup finely chopped yellow or red onion

½ cup sour cream
½ cup mayonnaise or yogurt

2 TBLS Hope Springs Supreme Baked Potato Gourmet Dip Mix
​1 TBLS mustard

½ tsp. garlic powder

Salt & Pepper to taste

Paprika


Directions

1. In small bowl, mix Supreme Baked Potato dip mix, sour cream,

    mayonnaise, mustard, and garlic powder together and set aside.
2. In large bowl combine potatoes, eggs, pickles,  celery, and onion.

3. Add dip mixture and gently combine well.

4. Season with salt and pepper to taste.

5. Sprinkle top with paprika.

6. Refrigerate for 1 to 2 hours or overnight before serving.

Crispy Pea Salad


 Ingredients

½ cup Sour Cream
½ cup Mayonnaise or Yogurt

2 TBLS Hope Springs Dill-icious Gourmet Dip Mix
​1 - 10 oz. package frozen or fresh peas - partially thawed

1 cup cauliflower - chopped

1 cup celery - diced

½ cup red onion - chopped fine

1 cup cashews - coarsely chopped (optional)

4 - 5 bacon strips - cooked crisp and crumbled

Salt & Pepper to taste


Directions

1. In small bowl, mix Dill-icious dip mix, sour cream and

    mayonnaise together and set aside.
2. In large bowl mix remaining ingredients except bacon.

3. Add dip mixture and combine well.
4. Refrigerate for at least 1 hour.

5. Sprinkle with bacon and serve.

 Ingredients

​1 can Black Eyed Peas – drained well
¼ - ½ cup Red Onion – chopped
1 – 2 Jalapeños – seeded, deveined & chopped
¼ - ½ cup Tomato – chopped

½ TBLS Hope Spring Gourmet Island Peaks Spice Blend

1 TBLS Fresh Cilantro or Parsley - chopped

Italian Dressing
Salt & Pepper to taste


Directions

1. Mix first 6 ingredients together in bowl.
2. Add just enough Italian dressing to coat well, but not drown.
3. Salt and pepper to taste.
4. Mix well and refrigerate for 2 to 4 hours or overnight.

5. Serve with your favorite flavor of Hope Springs Gourmet Crackers!

Simple Veggie Slaw


 Ingredients

​4 Cups Cabbage – shredded
2 Carrots – shredded

1/4 Cup Chopped Red Onion
1 TBLS Hope Springs VEGGITASTIC Gourmet Dip Mix
½ Cup Buttermilk

½ Cup Mayonnaise or Yogurt

Salt & Pepper to taste


Directions

1. In small bowl, mix Veggitastic dip mix with 

    buttermilk and mayonnaise together and set aside.
2. In large bowl mix cabbage, carrots and onion, add dressing mixture and combine well.
3. Refrigerate for 2 – 4 hours or overnight. Serve chilled.

Lobster Smackin' Cheese

Ingredients


1 LB Penne Pasta
4 TBLS butter
2 – 3 green onions, sliced thin
2 cloves garlic, minced
2 – 8 oz. raw lobster tails, meat removed from tail & chopped
4 TBLS flour
¼ Cup white wine - optional
4 Cups heavy cream
2 Cups shredded sharp white Cheddar cheese
2 Cups shredded Gruyere cheese
Salt & Pepper to taste
½ Cup Hope Springs CHEESY POTATO Gourmet Crumbs

Directions

​1. Cook pasta according to direction on package, drain and set aside.
2. Melt butter in large pot over medium heat. Add garlic and onion and sauté until transparent.
3. Add flour and wine to make a rue. Slowly add the cream and continue to stir to prevent lumps.
4. Bring cream to a simmer, turning heat to low. Cook about 5 to 10 minutes until thickened. 
5. Stir in cheeses, a little at a time, blending well. Add lobster meat and pasta, stir well.

6. Pour into greased 13 X 9 baking dish, sprinkle top with Cheesy Potato crumbs.
7. Bake at 350 degrees for 25 to 30 minutes or until golden brown..

8. Let sit for 10 minutes before serving.

Cheesy Hash Brown Casserole

 Ingredients

​1 cup Hope Springs CHEESY POTATO Gourmet Crumbs
1 - 30 oz. frozen hash brown potatoes, thawed
1/2 cup melted butter
​2 TBLS Hope Springs Supreme Baked Potato Dip Mix

8 oz. Sour Cream

2 oz. Mayonnaise
1 can condensed cream of mushroom soup
1 1/2 cups shredded Colby jack cheese

1/4 cup Green Onion - chopped
Salt & Pepper to taste

Directions

​1. Combine all ingredients in bowl (except crumbs and 1/2 cup cheese) and mix well.
2. Pour in lightly greased large baking dish.
3. Mix remaining cheese and crumbs and sprinkle evenly on top.

4. Bake at 350 degrees for 30 minutes or until bubbling and lightly brown.

Black Bean & Corn Salad

 Ingredients

​1 -14 oz. can Black Beans – drained and rinsed
2 cups Frozen Corn
1 small Red Bell Pepper – seeded and chopped

1 Fresh Avocado - diced
1 ½ tsp. Ground Cumin
¼ cup Fresh Cilantro – chopped (optional)
1 TBLS Hope Springs Gourmet Ole' Chipotle or Mexi-Fiesta Spice Blend
1 Fresh Lime Juice

Directions

​1. Combine all ingredients in bowl (except avocado) and mix well.

Apple Walnut Tuna Stuffed Tomato

Ingredients:


4 to 6 medium to large Tomatoes – hollowed out and seeded (reserve tomato meat)
2 large Chunk Light Tuna in water – drained well
¾ cup Home Style Mayonnaise
1 TBLS Hope Springs Gourmet Dill-icious Dip Mix

1 Crisp Apple – chopped small
1 rib Celery – stringed and chopped fine
1 small leaf Kale – rinsed and chopped fine (optional)
1/3 cup Walnuts – chopped
Tomato meat from hollowed tomatoes – diced
Salt, Pepper & Garlic Powder to taste
Shredded Parmesan Cheese and Paprika for garnish.

Directions:

1. Mix well all ingredients in medium mixing bowl except hollowed tomatoes and parmesan cheese.
2. Spoon mixture into hollowed tomatoes and sprinkle with parmesan cheese.

Hope Springs Oven Roasted Broccoli, Cauliflower & Carrots!

Ingredients:
​Fresh Broccoli, Cauliflower & Carrots

(Cut into 1 inch pieces)

Olive Oil

Hope Springs Rocky Mountain Way Spice Blend 

Salt & Pepper            


Directions
1. Heat oven to 350 degrees

2. In medium bowl, place veggies.

3. Drizzle each with olive oil and season with Rocky Mountain Way to taste.

4. Toss until well coated and salt & pepper to taste

5. Place veggies in large baking pan/dish lined with parchment paper in single layer.

6. Bake 15 minutes, remove and stir.  

7. Return to oven and continue to bake approx. 10 minutes or until tender and cooked through.

Hope Springs Desert Garlic Corn Casserole Ring


 Ingredients

6 oz. Andouille Sausage - diced 1/4 to 1/2 inches

2 - 16 oz. pkg. Frozen Corn - thawed
2 - 3 TBLS Hope Springs Gourmet Desert Garlic Blossom Dip Mix or Sedona Garlic Spice Blend

4 oz. Chopped Green Chilies

Salt & Pepper to taste

8 oz. Cream Cheese - cubed and room temperature

2 to 3 springs Green Onion - sliced

17.3 oz. Frozen Puff Pastry - thawed

2 to 4 TLBS Butter - melted

1/2 cup Colby Jack Cheese - shredded


Directions

1. In large skillet, sauté sausage on medium heat until browned.

    Remove sausage from skillet and set aside, reserve drippings in skillet. 
2. Add 2 TBLS butter to drippings.

    Then add corn, Hope Springs Desert Garlic Blossom Dip Mix and

    stir fry until golden brown and kernels are plump. 

3. Add green chilies,  salt and pepper to taste.
4. Add cream cheese and combine until melted and well blended. 

5. Return sausage to mixture and stir. Add green onion and stir.

6. Remove mixture from heat and let cool.

7. Roll out each puff pastry sheet on lightly floured board until approx. 14" x 16".

8. Cut each sheet in oval with center cut out. (Second sheet slightly larger)

9. Spoon cooled mixture in center of dough ring.

10. Place second dough sheet over top and crimp outside and inside edges. 

11. Cut slits in top and brush with melted butter.

12. Bake on sheet pan at 400 degree oven for 12 to 15 minutes or until golden brown.

13. Sprinkle shredded cheese on top and broil until melted and turning brown.

4 oz. Cheddar Cheese - Shredded

8 oz. Parmesan Cheese - Shredded (reserving 1/4 cup for topping)

1 Pint Heavy Cream

1 Stick Butter

2 TBLS Cream Cheese - room temperature

1 tsp. Garlic Powder

Salt & Pepper

2 TBLS Hope Springs Gourmet Scempio Italiano Dip Mix 
1 Cup Shredded Parmesan Cheese 

1 Pkg. Linguine Pasta - cooked according to directions on package

Fresh Parsley or Basil


Directions

1. In medium / large skillet melt butter on medium heat.
2. Gradually add heavy cream and whisk / stir to combine and heat through. 
3. Add cream cheese and stir until combined.  

4. Add garlic powder, salt, pepper and Scempio Italiano Dip Mix.

5. Add parmesan cheese and continue cooking, stirring often. When mixture starts to bubble,

     reduce heat and simmer for 10 to 15 minutes or until sauce has thickened.

 Ingredients

2 to 4 Russet Potatoes - rinsed, pat dry and diced
1 to 2 TBLS Hope Springs Gourmet Kaleidoscope Spice Blend
Vegetable or Olive Oil

Salt and Pepper

1/2 to 1 Cup Shredded White Cheddar or Monterey Jack Cheese


Directions

1. In large skillet (I prefer cast iron) coat bottom with oil. 
2. Heat skillet on medium low heat. When oil is hot, add potatoes and stir.

3. Season potatoes with Kaleidoscope Spice Blend, salt and pepper to taste.
4. Place lid on skillet and cook on medium low heat, stirring often. 

5. When potatoes are tender and almost done, remove lid and continue

     until potatoes are golden brown.

6. Sprinkle with cheese and serve warm.

Hope Springs Sautéed Red Cabbage


 Ingredients

1/2 Head Red Cabbage - sliced thin and separated
1/2 Small Red Onion - Sliced thin and separated
1 - 2 tsp. Hope Springs Gourmet White Tiger Spice Blend
2 TBLS Olive Oil

1 TBLS Butter

1 TBLS Red Wine Vinegar

1 Rounded TBLS Sugar

1/4 Cup Sliced Almonds


Directions

1. In medium / large skillet heat olive oil and butter on med-high heat.
2. Add onion and cook, stirring often for 2 to 3 minutes.
3. Add cabbage and toss using tongs. Season with White Tiger Spice Blend

    Continue cooking and stirring with tongs for 3 to 4 minutes.

4. Sprinkle with red wine vinegar and sugar.

5. Continue cooking, stirring with tongs until cabbage starts to wilt slightly.

    Remove from heat and add sliced almonds.
