Hope Springs "Zucornion" Cakes


Ingredients

1 Medium or 2 Small Zucchini 

1/2 Cup Frozen Corn - thawed 

2-3 Green Onions - sliced 

1 to 2 TBLS Hope Springs Gourmet Tejas Toasted Onion Dip Mix

1/2 Cup Hope Springs Gourmet Salty Dill Crumbs

      Note: May use Hope Springs Gourmet Salty Dill Crackers - crushed into fine crumbs

Salt & Pepper to taste

1 Extra Large Egg or 2 Small Eggs

1/2 Cup Shredded Parmesan Cheese

Olive Oil


Dipping Sauce:

2 TBLS Hope Springs Gourmet Tejas Toasted Onion Dip Mix

1/2 Cup Sour Cream

1/2 Cup Mayonnaise



Directions
1. Wash and cut ends off zucchini. Using cheese grater, shred zucchini and lightly salt.

     Place shredded zucchini in strainer and then place in large bowl.

    Cover and place in refrigerator for 1 to 2 hours. Press excess water out and place in bowl.

2. Make dipping sauce by combining Tejas Toasted Onion Dip Mix, sour cream and mayonnaise.

    Cover and refrigerate 1 to 2 hours.

3. Add corn, green onions, Tejas Toasted Onion Dip Mix, crumbs, salt & pepper and combine.

4. Add eggs and cheese. Mix well.

5. In medium skillet heat olive oil. Place large spoonful of mixture in pan and press to form patty.

6. Cook until golden brown and gently turn to brown other side. 

7. Salt and pepper to taste.

Serve and enjoy with Tejas Toasted Dip


Note: Turn into zucchini cups by placing spoonful of mixture in muffin tins (sprayed with olive oil non-stick spray) and bake in 350 degree oven for 20 minutes or until golden brown. Let cool and fill with Tejas Toasted Onion Tuna Salad.

Mix one can tuna (drained) with prepared Tejas Toasted Onion Dip, add sliced green onion and salt & pepper to taste.

Hope Springs Caramelized Onion Tarts

Ingredients:

1 Lg. Yellow Sweet Onion

2 TBLS Butter

1 1/2 - 2 TBLS Hope Springs Gourmet

                        Triple Crown Horseradish Dip Mix

2 oz. Cream Cheese (room temp.)  or Goat Cheese

1 Frozen Puff Pastry Sheet - thawed according to package directions

Fresh Chives, Green Onion or Parsley - sliced / chopped

Directions
1. Heat oven to 400 degrees

2. Quarter and thinly slice onion. 

3. In skillet, melt butter and slowly cook onion until transparent and caramelized, stirring often.

    Half way through cooking onion, sprinkle in Horseradish Dip Mix.

4. When onion is done, remove from heat and add cream cheese and blend well.

5. Unfold pastry sheet. Using rolling pin, gently roll out to approx. to 12" x 9 " rectangle. 

5. Prick pastry all over with fork. Using cookie cutter, cut 12 circles and place on nonstick cookie sheet.

6. Place 1 rounded spoonful of onion mix in center of dough.

7. Cook at 400 degrees for approximately 8 to 12 minutes or until golden brown. 

8. Remove from oven and garnish with herbs.

Hope Springs Broccoli Cheese Onion Rings
Ingredients:

2 Small / Medium Yellow Onions - sliced in 1/2 inch slices

1  12 oz. Pkg. Frozen Broccoli Florets - thawed

1 Pkg. Hope Springs Gourmet Toasted Sweet Onion Crackers

1 Cup Shredded Cheddar or Colby Jack Cheese

6 Eggs - Reserving 4 for battering

1/4 Cup Milk

1 TBLS Hope Springs Texas Branded Onion Spice Blend.

1 Cup All Purpose Flour

1 8 oz. Pkg. Panko Crumbs

Vegetable or Canola Oil for Frying

S & P to taste


Directions
1. Carefully separate onion rings as to not break any rings. (Reserve rings that are too big or too small for another recipe)

2. Place onion rings on platter or backing sheet lined with parchment paper.

3. Coarsely chop broccoli. Use paper towel to press out excess liquid.

4. Use food processor to crush crackers into fine crumbs.

5. In medium bowl, add broccoli, crumbs, cheese, Texas Branded Onion Spice Blend, and 2 eggs. Combine well.

6. Firmly press broccoli mixture into each onion ring. Careful to not break ring.

7. In 3 separate bowls or plates, place flour in one, 4 eggs & milk - beaten in 2nd and panko crumbs in 3rd. Salt & Pepper each.

8. Coat each ring first in flour, then egg and last panko crumbs. Set on sheet.

9. Pour 1/2 inch of oil in bottom of skillet. Heat to 350 degrees.

10 When oil is hot, carefully place each broccoli onion ring in pan and cook until golden brown, turning only once.

11. Remove and drain on paper towel.

​1 can Black Eyed Peas – drained well
¼ - ½ cup Red Onion – chopped

Directions

1. Mix first 4 ingredients together in bowl.
2. Add just enough Italian dressing to coat well.

Ingredients:

4 Cups leftover Hope Springs Brazilian Baked Ham (recipe)- diced small 

Hope Springs Tejas Toasted Onion Gourmet Dip Mix.

1/2 Cup Mayonnaise

1/2 Cup Sour Cream

2 - 4 TBLS Sweet Pickle Relish - optional


Directions
1. Mix one batch of Tejas Toasted Onion Dip Mix according to directions.

2. Dice ham or chop in food processor.

3. Combine dip mix with ham until well blended.

4. Add pickle relish and mix well. 

5. Chill in refrigerator for 1 hour or more.

Italian Chicken Strips with

Dipping Sauce

Ingredients

4 Boneless - Skinless Chicken Breasts

1 Pkg. Hope Springs Gourmet Rosemary, Thyme & Parmesan Crumbs
2 - 3 TBLS Hope Springs Fusione Italiano Spice Blend

1/4 to 1/2 Cup Melted Butter

1/4 Cup Olive Oil

1 oz. Pkg. Shredded Parmesan Cheese

Dipping Sauce:

8 oz. Pasta Sauce or homemade sauce

8 oz. Alfredo Sauce or homemade sauce

1 TBLS Sour Cream

1 TBLS Hope Springs Fusione Italiano Spice Blend

1 Green Onion - sliced

Directions
1. In plastic bag, pound chicken until 1/2" thick and slice into 1" strips.

2. Season chicken with 1 to 2 TBLS spice blend

3. Mix melted butter and olive oil in bowl and set aside.

4. Mix crumbs, 1 TBLS spice blend and 1/4 cup parmesan cheese.

5. Dip seasoned chicken in butter/olive oil and coat on all side with crumb mix.

6. Place on large cookie sheet lined with parchment paper.

    Bake in 350 degree oven for 15 minutes.

7. Remove and sprinkle tops with remaining parmesan cheese

8. Cook an additional 15 to 20 minutes until chicken is done and

    cheese is slightly brown.

9. Combine all ingredients for sauce in small pan and slowly heat until warm.

Pour in serving bowl and garnish with green onion.

Simple Tomato Parmesan Crostini  

Ingredients:


1 loaf Baguette or French Bread - sliced at an angle 1/2 in thick

Olive Oil

Roma Tomatoes - sliced thin

Shredded Parmesan Cheese

Fresh Basil - optional

Directions

Arrange bread slices on cookie sheet. Brush bread lightly with olive oil. Place one basil leaf and slice of tomato on each piece of bread. Sprinkle with Hope Springs Spice or Dip Mix Blend. Top with parmesan cheese. Place in oven and broil until cheese is melted and golden brown, watching constantly. Serve immediately.

Directions
1. Heat oven to 350 degrees

Hope Springs Tropical Fruit Cream Cheese Puffs


Ingredients

1 Frozen Puff Pastry Sheet - thawed according to package directions

1 - 8 oz. Pkg. Cream Cheese - room temperature

8 oz. Jar Peach Preserves

1 to 1 1/2 TBLS Hope Springs Tropical Fruit Dip Mix

1 TBLS Fresh Lemon Juice or Pineapple Juice


Directions
1. Using rolling pin, roll pastry sheet to approximately 9" x 12".

2. Prick pastry all over with a fork and cut into 3" x 3" squares.

3. Cut cream cheese into 12 pieces.

4. Place each pastry square in lightly buttered or non stick muffin tin, leaving points over edge of cup.

5. Place one cream cheese piece in bottom of each cup. Bake at 350 degrees for approximately

    12 to 15 minutes or until starts turning golden brown.

6. Meanwhile, in small sauce pan mix preserves, juice and Hope Springs Tropical Fruit Dip Mix.

    Heat on low heat until well blended. Careful not to boil. Stir often.

7. Remove pastries from oven and place one spoonful of fruit mix

    over cream cheese in each muffin cup.

8. Return to oven and continue baking for approximately 10 more minutes or until golden brown.

Let cool 5 minutes before serving.

1/2 Cup Grated Parmesan Cheese


Directions
1. Heat oven to 400 degrees

2. Peel & slice vegetables or break into florets.

3. In food processor, grind crackers into fine crumbs.

4. Place crumbs in medium bowl, add cheese and mix.

5. In medium bowl whisk eggs and milk.

6. Dip veggies in egg mixture and then coat with crumb mixture.

7. Place in single layer on cookie sheet lined with parchment paper.

8. Bake for 10 to 12 minutes or until veggies start turning brown.

9. Remove from oven and turn veggies.

10. Place back in over and continue baking until golden brown.

Hope Springs Simple Hummus Cups

Ingredients:

1 Can Crescent Rolls

1 Batch - Hope Springs Gourmet Hummus (recipe)

               without pesto and olive oil drizzle

Your favorite veggies for garnish (pictured - yellow squash, zucchini, carrot)


Directions
1. Heat oven to 375 degrees

2. Roll out crescent roll dough and seal seams . Use 2" cookie cutter to

    make 20 to 24 circles.

3. Place each circle in ungreased mini muffin cup. Press down and against the

    sides, use  small fork to prick dough on the sides and bottom.

    Bake 8 to 10  minutes until golden brown.

    If cups are puffed, use small spoon to press against sides. Let cool.

4. Add small spoon of hummus in the center of each pastry cup.

5. Garnish with your favorite fresh vegetables.

Ingredients:

1/2 lb. Italian Sausage

2 TBLS Hope Springs Gourmet Scempio Italiano Dip Mix

8 oz. Cream Cheese (room temp.)  or Goat Cheese

1 can Crescent Rolls

Fresh Basil or Parsley - chopped

Directions
1. Heat oven to 375 degrees

2. Mix Scenpio Italiano dip mix with cheese

3. In skillet, cook sausage until done, crumbled and no pink remains.

4. Unroll crescent rolls and press seams to make a 12" x 9 " rectangle. 

5. Cut dough into 24 squares.

6. Place 1 rounded teaspoon of sausage in center of dough square. Top with 1

    teaspoon cheese mixture. Bring corners to top, twist and seal.

7. Place on ungreased cookie sheet and bake for 10 to 15 minutes or until

    golden brown. Tops with chopped basil or parsley

Ingredients:


​1 Batch Hope Springs Easy Parmesan Crisps (recipe above) 
1 TBLS Hope Springs Scempio Italiano Gourmet Dip Mix

4 oz. Cream Cheese

1/4 cup Pinon Nuts - roasted

2 TBLS Fresh Basil or Parsley - chopped fine


Directions
1. In small bowl, mix Hope Springs Gourmet Scempio Italiano Dip Mix

     with cream cheese. Note: Heat cream cheese in microwave for

     10 to 15 seconds on low to soften.

2. Gently spread cheese blend on each parmesan crisp.

3. Sprinkle with Pinon nuts and herbs.


Hope Springs Tropical Fruit Tarts

Ingredients

1 cup or 2 sticks  Unsalted Butter - room temperature

1/2 cup powdered confectioners sugar

1 tsp. Vanilla Extract

1 1/2 cups All Purpose Flour

3 TBLS Cornstarch

1/4 tsp. Salt

2 TBLS Hope Springs Tropical Fruit Dip Mix

16 oz. Vanilla Yogurt

1 pint Fresh Strawberries - sliced

3 oz. Chopped Walnuts


Directions
1. In large deep mixing bowl, beat butter and sugar on medium speed for 2 minutes until smooth.

2. Add vanilla and mix for 30 seconds.

3. Add flour, cornstarch and salt and mix until incorporated.

4. Roll into 36 small balls or 12 - 18 large balls.

    Note: if dough is too soft to roll into balls, refrigerate covered for 30 to 60 minutes.

5. Lightly spray 36 mini muffin or 12 muffin tins with butter flavor non-stick spray.

6. Place each ball in center of each mini muffin tin cup or muffin tin cup.

7. Press dough in center and up sides of each muffin tin.

    Place muffin tin in freezer for 20 to 30 minutes.

8. Mix Tropical Fruit Dip Mix with vanilla yogurt and refrigerate.

9. Heat oven to 325 degrees.

10. Remove tart / muffin tins from freezer and bake for about 20 minutes or until golden brown.

    If the tarts have puffed up, lightly prick the bottom of each with a fork.

11. Once tarts are completely cool, remove from pan.

    Note: may bake ahead of time and freeze until ready to use!

12. Remove Tropical Fruit Dip from refrigerator and stir.

    Fill each cup and garnish with sliced strawberries and walnuts.

Hope Springs Horseradish Pork Cakes with Dipping Sauce

 Ingredients

​1 lb. Ground Pork

1 Pkg. Hope Springs Gourmet Cheesy Potato Crumbs

1 Pkg. Hope Springs Gourmet Triple Crown Horseradish Dip Mix

3 Eggs

3/4 Cup Milk, Evaporated Milk or Half & Half

1/4 Cup Green Onion - sliced

Salt & Pepper to taste

1/2 Cup Shredded Parmesan Cheese

Vegetable Oil

8 oz. Sour Cream

2 oz. Mayonnaise


Directions

​1. In small bowl, mix 2 TBLS Triple Crown Horseradish Dip Mix with sour cream and mayonnaise. Refrigerate 2 to 4 hours.

2. In medium bowl, mix together ground pork, 1/3 cup Cheesy Potato Crumbs, 1 egg, 1/4 cup milk,

    1/4 cup green onion, and 2 TBLS Triple Crown Horseradish Dip Mix. Salt & Pepper to taste.
3. Divide pork mixture into 12 to 16 medium size balls and flatten to make 3" round patties.

4. In small bowl; beat 2 eggs with 1/2 cup milk and set aside.

5. On plate or in pie plate combine remaining Cheesy Potato Crumbs with 1/2 cup shredded Parmesan cheese. 

6. In large skillet, pour in vegetable oil until bottom of pan is coated. Heat on medium heat.

7. Dip pork patties in egg wash and coat with crumb mixture.

8. Cook in hot skillet until golden brown on both sides and pork is cooked through.

    Place cooked patties on plate/platter lined with paper towels.


Serve with Triple Crown Horseradish Dip


Hope Springs Gourmet Spinach Balls with

Spinach Parma Dipping Sauce 

Ingredients:


1 - 10 oz. pkg. Frozen Spinach - thawed

3/4 Cup Hope Springs Gourmet Salty Dill Crumbs

1/2 Cup Shredded Parmesan Cheese

2 Eggs - lightly beaten

1/4 cup Butter - melted


Dipping Sauce:

2 TBLS Hope Springs Spinach Parma Dip Mix

6 oz. Sour Cream

4 oz. Mayonnaise

1 TBLS Green Onion or Fresh Spinach - chopped fine


Directions
1. Mix one batch of  Hope Springs Gourmet Spinach Parma Dip Mix according to directions on package and refrigerate for 2 to 4 hours. 

2. Cook spinach according to directions on package.

3. Drain spinach in sieve, using back of spoon to press out as much moisture as possible.

4. Transfer spinach to medium bowl. Add crumbs, cheese, eggs and butter. Blend well and place in refrigerator for 15 minutes.

5. Pre-heat oven to 350 degrees

6. Shape spinach mixture in 1" balls and arrange evenly on cookie sheet.

7. Bake  for 12 to 15 minutes or until lightly brown.

Serve with Hope Springs Gourmet Spinach Parma Dip Mix garnished with green onion or fresh spinach.


Note: You can make spinach balls ahead and freeze.

Simply place frozen spinach balls on cookie sheet and bake at 350 degrees until lightly brown.

Ingredients:


4 - 5 cups Frozen Hash Brown Potatoes - thawed

1 cup Colby Jack Shredded Cheese

2 TBLS Hope Springs Gourmet Supreme Baked Potato Dip 

8 oz. Sour Cream

2 oz. Mayonnaise

1 can Crescent Rolls

1/2 cup cooked bacon bits

1/4 cup chopped green onions


Directions:


1. Heat oven to 350 degrees.

2. Blend dip mix with sour cream & mayonnaise and refrigerate for 1 to 2 hours.

2. Place hash brown potatoes in medium bowl, cut into small pieces and heat in microwave on high for 2 minutes. 

    Add cheese, 1/2 to 2/3 cup Supreme Baked Potato Dip (reserving some dip mix for garnish), bacon bits (less 2 TBLS).

    Mix well and set aside.

3. Remove dough from container and cut in half at center. Unroll each half and press into 14" x 8" rectangle sealing all seams.

4. Spread half of the potato mixture on dough, leaving 1/4-inch on long edge.

5. Roll tightly, starting on long side and seal.

6. Slice roll in 1/2" slices and place on cookie sheet.

7. Repeat with second dough rectangle.

8. Bake 15 to 18 minutes or until golden brown. Remove from oven and let cool 5 minutes.

9. Top with remaining Hope Springs Gourmet Supreme Baked Potato Dip and garnish with remaining bacon and green onions.

Hope Springs Wrapped Asparagus with Spinach Parma

Ingredients

1 to 2 Bundles Fresh Asparagus

1 Pkg. Frozen Phyllo dough - thawed and cut in half length wise

1 Pkg. Hope Springs Gourmet Spinach Parma Dip Mix

1 Stick Butter - Melted

6 oz. Sour Cream

4 oz. Mayonnaise

Grated Parmesan Cheese 


Directions
1. Mix 2 TBLS Hope Springs Spinach Parma Dip Mix with Sour Cream and Mayonnaise.

    Refrigerate for 2 to 4 hours.

2. Cut 1 inch off bottom of Asparagus base. Use peeler to trim outer layer of base.

3. In large steamer pot, bring 2 quarts salted water to boil.

    Steam Asparagus for 5 minutes. Remove and place in ice water to stop cooking process.

    Pat dry and set aside.

4. Using 2 to 3 sheets, at a time of Phyllo dough laid out, brush with melted butter and sprinkle with    

    Hope Springs Gourmet Spinach Parma Dip Mix.

5. Roll 2 to 3 Asparagus spears in phyllo dough. Place on cookie sheet lined with parchment paper.

6. Repeat process with remaining asparagus and Phyllo dough.

7. Brush tops of all rolls with melted butter and sprinkle with grated parmesan cheese.

8. Bake in 350 degree oven for 20 minutes or until golden brown.

Note: Make ahead of time and freeze. When ready to bake, take straight out of freezer and place on cookie sheet lined with parchment paper.
