Hope Springs Cajun Nouveau Stew


Ingredients

1 Lg. Boneless, Skinless Chicken Breast
1/2 lb. lb. Medium Shrimp - deveined and with out tails
1 link or 6 oz. Andouille Sausage - sliced and cut in quarter pieces
3 TBLS Hope Springs CAJUN NOUVEAU Spice Blend
8 oz. Fresh Mushrooms - sliced
(may substitute large canned mushrooms - drained)
1/2 each Yellow, Orange & Red Bell Pepper - diced
1/2 yellow onion - diced
1 cup fresh or frozen corn
2 to 4 TBLS Butter
2 to 4 TBLS Olive Oil
24 oz. Jar of your favorite Marinara or Homemade Sauce
8 oz. Jar of your favorite Alfredo or Homemade Sauce
14 oz. Canned Fireroasted Diced Tomatoes
4 cups cooked Brown Rice
8 oz. Shredded Italian 6 Cheese Blend
3 - 4 Green Onions - sliced

Directions

1. Season, to taste, cubed chicken with Cajun Nouveau Spice Blend and set aside.
2. Rinse and pat dry shrimp and season Cajun Nouveau Spice Blend and set aside.
3. Keep sausage set aside, for now, no need to season unless desired.
4. In large sauce pan, combine pasta & alfredo sauces with diced tomatoes and blend with 1 to 2 TBLS Cajun Nouveau blend or to taste.
Cook on med/low heat until sauce is blended, stirring often.
5. In large skillet, melt 1 TBLS butter and 1 TBLS olive oil on medium heat. Add mushrooms and cook until mushrooms are tender and brown.
Remove mushrooms and add to sauce.
6. In same skillet, sauté bell peppers and onions until tender. (May add more butter or olive oil if needed) Remove and add to sauce.
7. In same skillet sauté corn, and season with Cajun Nouveau Spice Blend. (May add more butter if needed). Remove and add to sauce.
8. In same skillet add cubed seasoned chicken and cook until chicken is cooked fully. Add to sauce.
9. In same skillet, sauté seasoned shrimp until cooked through and pink in color. Add to sauce.
10. In same skillet, add cut sausage and cook until brown and slightly crispy. (May add more olive oil if needed) Add to sauce.
Note: You will want to reserve the dipping in the skillet after cooking each batch for the next. This will help combine flavors!
11. Simmer for 15 to 20 minutes to blend flavors.

12. Serve over cooked brown rice and garnish with cheese and green onions.

FALL BEEF, VEGETABLE & BARLEY COMFORT SOUP

“My family LOVES this soup when the fall chill moves in.” 

First start with:

2 lbs beef – (such as roast or sirloin steak)
2 T olive oil
3 T Hope Springs Gourmet Smokey Top Dry Rub Spice Blend
Cube beef into bite sized pieces.  Coat in olive oil, and season with

        Smokey Top Dry Rub
Brown in stock pot.  Do Not Drain.
3 cubes beef bullion
1 c water
3 T Hope Springs Gourmet Sedona Garlic Spice Blend
1 cup brewed coffee
Dissolve bullion in water and coffee with

       Hope Springs Gourmet Tejas Toasted Onion Dip Mix
Pour into pot with browned meat and simmer for 1 hr

Add:
1 large tomato, diced small
2 lg. carrots, sliced thin
3 stalks of celery, chopped
½ small head of cabbage, chopped
2 c vegetable juice (such as V8)
1 c water
Add vegetables, juice and water to pot and simmer until carrots are partially cooked.

Then add:
2 large potatoes, cubed
1 c pearl barley
Add to pot and boil on medium heat for 30 to 45 minutes

 Last add:
1 can corn, drained (or 2 c frozen corn)
1 can cut green beans, drained (or 2 c frozen green beans)
1 c chopped fresh cut spinach
Add to soup and simmer until warmed.

Served with Tejas Toasted Onion seasoned rolls. (recipe)

Customize soup vegetables to your family’s taste. Add squash, beets, etc.

At the appropriate point for cooking that vegetable.

Freeze leftovers for another cold night when home cooked comfort is needed! (Tastes even better reheated!)

Hope Springs Cabbage & Ham Soup

This soup is so flavorful, you won't even know it's healthy!

Ingredients

1 Medium to Large Head Green Cabbage - chopped
12 oz. bag Petite Baby Carrots
10 to 12 Fresh Brussels Sprouts - trimmed & cut in half
6 to 8 Green Onions - sliced
1 Medium Yellow Onion - chopped
1/2 to 1 LB Cooked Ham - cubed
4 Cloves Garlic - minced
2 Bay Leaves
1 Quart Vegetable Stock (recipe)
1 Quart Chicken Stock (recipe)
1 to 2 TBLS Hope Springs Breakfast @ Tiffany's or
Rocky Mountain Way Spice Blend

Salt & pepper to taste

Water


Directions

1. Combine all ingredients in large 12 to 14 quart pot.
2. Add enough water to come even with top of veggies.
3. Bring to boil on stove, then reduce heat to simmer on
medium low for 45 minutes to an hour until veggies are tender.
3. Remove bay leaves.

Hope Springs Best Ever Chicken Noodle Soup!


Ingredients

2 Quarts Chicken Stock (recipe)
1 Rotisserie Chicken - skinned, deboned and cubed
3 to 4 Lg. Carrots - peeled and diced
3 Ribs Celery - sliced
1 Small Yellow Onion - chopped
1 to 1 1/2 Cups Frozen Peas
1 Heaping Spoonful of Sour Cream
1 to 2 TBLS Hope Springs Sedona Garlic Spice Blend
8 oz. Angel Hair Dry Pasta - broken into thirds and cooked according to directions on package.
Salt & pepper to taste



Directions

1. In large pot, heat Chicken Stock until starts to boil. 
2. Add carrots, celery and onion, reduce heat and simmer until
vegetables are tender.
3. Add Peas, Sour Cream and Sedona Garlic Spice Blend.
Stir until well combined and simmer.
4. In separate large pot, cook pasta just 3 minutes, careful to not over cook.
5. Drain pasta, add to soup and serve.
​Serve with your favorite Hope Springs Gourmet Crackers

Note: You may adjust the amount of vegetables according to preference.

Hope Springs Unwrapped Cabbage Rolls

Ingredients

1 lb Ground beef (I used 97/3)
1 medium Yellow Onion - chopped
1 medium Head Green Cabbage
1 - 14.5 oz can of Fire Roasted Tomatoes
1 - 8 oz can of Tomato Sauce
2 C Beef Broth
2 Tbsp Hope Springs Fusion Italiano Spice Blend
1 Tbsp Olive Oil
2 C freshly grated Colby Jack Cheese
Salt
Pepper


Directions

1.     In a Dutch oven, or similarly sized pot, sauté chopped yellow onion with olive oil, salt, 
and pepper over medium to medium-high heat. 
2.    As onions begin to sweat, add ground beef and sprinkle with Hope Springs Fusion Italiano. 
Cook until beef is browned. 
(I did not need to drain the meat after cooking because I used very lean ground beef. 
If using fattier meat, wait to season until after you drain the browned meat and onion mixture.) 
3.   While meat is browning, coarsely chop the head of green cabbage. 
Once beef is browned, add tomato sauce, fire roasted tomatoes, and beef broth; stir to mix. 
4.   Add chopped cabbage to the pot and fold into the meat mixture. 
On medium heat, simmer the mixture, stirring regularly until cabbage mixes well into the mixture. 
Once the cabbage cooks into the mixture enough that the liquid comes to the
edge of the entire beef/cabbage mixture, simmer uncovered for 20 minutes, stirring occasionally. 
5.   Sprinkle grated cheese on top, cover, and lightly simmer 5 minutes, or until cheese is melted. 
Serve and enjoy!

Hope Springs Vegetable Beef Soup

Ingredients

2 lb. chuck or arm roast - trimmed and cubed
2 - 3 TBLS olive oil 
1 Lg Onion – chopped
2 to 4 Garlic cloves – minced
4 medium potatoes - peeled and cubed
4 - 5 carrots - peeled and cubed
1 cup frozen corn
1 cup frozen green peas
2 cups frozen green beans
2 -3 celery ribs - stringed and sliced
1 – 28 oz. cans chopped tomatoes
8 oz. can tomato sauce
4 oz. can chopped green chilies - optional
2 – 3 bay leaves
2 to 3 TBLSHope Springs Garden Fresh Spice Blend
½ tsp. salt
Pepper to taste
​4 cups beef or vegetable broth

Water - just enough to cover vegetables


Directions

1. In large soup pot brown beef in olive oil
2. Add onion, garlic and sauté with beef.
3. Add all vegetables to pot.
3. Stir in remaining ingredients
​4. Bring to boil, reduce heat, cover and cook till vegetables are tender.
5. Remove bay leaves before serving

Taco Soup

Ingredients

1 lb ground beef
1 tsp. Hope Springs Mexi-Fiesta Spice Blend
1 large onion chopped
3 cans (16 oz) Mexican-style chili beans, undrained
1 can (16 oz) shoe kernel corn, undrained
1 can (16 oz) chopped tomatoes, undrained
1 can (15 oz) Mexican tomato sauce 
1 - 1/2 cups water
1 can (4.5 oz) chopped green chilies
1 pkg (1.25oz) taco seasoning mix
1 envelope Ranch Style salad dressing mix


Directions

1. Cook beef, seasoned with Mexi-Fiesta spice, and onion in 
large dutch oven or pot, until meat is brown, stirring until
it crumbles, then drain.

2. Stir in the rest of the ingredients, bring to a boil.
​3. Reduce heat and let simmer for 15 minutes.

Chicken Tortilla Soup

Ingredients

1 pound chicken

1 (15 ounce) can whole peeled tomatoes -  mashed

1 (10 ounce) can enchilada sauce

1 medium onion, chopped

1 (4 ounce) can chopped green chile peppers

2 cloves garlic, minced

2 cups water

1 (14.5 ounce) can chicken broth

1 teaspoon cumin

1 - 2 tsp. Hope Springs Gourmet Ole' Chipotle Spice Blend

Salt & Pepper to taste

1 bay leaf

1 (10 ounce) package frozen corn

1 TBLS chopped cilantro or parsley

7 corn tortillas

vegetable oil


Directions

1. Place chicken, tomatoes, enchilada sauce, onion, green chiles, and garlic into a slow cookers. Pour water and chicken broth, 
and season with cumin, chili powder, salt, pepper and bay leaf. Stir in corn and cilantro.
Cover, and cook on Low setting for 6 to 8 hours or on High setting for 3 to 4 hours.
Pull out chicken 1 hour before serving to shred and return to cooker.

2. Preheat oven to 400 degree F (200 degrees C).

3. Lightly brush both sides of tortillas with oil. Cut tortilla into strips, then spread on a baking sheet.

4. Bake in preheated oven until crisp, about 10 to 15 minutes. To serve, sprinkle tortilla strips over soup.

Cheaters Tomato Bisque Soup

Ingredients

1 10 ¾ oz. Tomato Soup
2/3 cup milk or water
2 Tbls. Sour cream
¼ tsp. garlic powder
¼ tsp. onion powder
½ TBLS Hope Springs Fusione Italiano Spice Blend
Salt & pepper to taste


Directions

1. Combine all ingredients in sauce pan.
2. Simmer until warm and creamy
3. Garnish with chives, parsley or sliced green onion
​4. Serve with Sun Dried Tomato Hope Springs Gourmet Crackers or Easy Parmesan Crisps (recipe).


Awesome Clam Chowder

Ingredients

3 (6.5 oz) cans minced clams
1 cup minced onion1 cup diced celery
2 cups cubed potatoes
1 cup diced carrots
¾ cup butter
¾ cup flour
1 quart half and half cream
2 Tbls red wine vinegar
½ tsp salt
Black pepper to taste
Chives or sliced green onions



Directions

1. Drain liquid from clams into large skillet. Add onions, celery, 
potatoes and carrots. Add enough water to cover and cook
over medium heat until tender.
2. In large heavy saucepan, melt butter over medium heat.
Whisk in flour until smooth. Whisk in cream and stir until
thick and smooth. Add cooked vegetables and liquid.
Heat through, but don’t boil.
3. Add clams before serving. When clams are heated,
stir in vinegar and season with salt and pepper.
Garnish with chives or sliced green onions.
4. Serve with Cheesy Potato Hope Springs Gourmet Crackers.

Cabbage, Sausage & Tomato Soup
